In my experience, the C to C range has worked well,
but you do have to take the characteristics of
individual songs into consideration. Most people will
stick with you if an occasional note stretches them,
but you don't want to live up there on that high C.
And then there are some great songs that simply won't
fit into those range specs no matter what you do, like
Shout to the Lord, with the low verse and the high
chorus. You have to be willing to make exceptions, and
for a great song like that, the congregation will make
exceptions, too.
For me, I don't find it jarring to hear or sing a song
in a different key than the way it was recorded, and I
seriously doubt that your typical congregation would
be put off by it either.
